Blender Hollandaise

Total Time: 8 minutes   Preparation Time: 5 minutes   Cooking Time: 3 minutes

Yields: 4 servings

Ingredients:

  • Yolk from 1 large egg
  • 5 tsp lemon juice
  • A pinch of cayenne pepper
  • 4 tbsp of unsalted butter
  • Salt

Method:

  1. Transfer the egg yolk, lemon juice and cayenne pepper to the blender jar and pulse it a few times to get an even mixture.
  2. Melt butter in the microwave and add it to the blender jar while the machine is running until you get a creamy mixture.
  3. If the sauce is too thick for your taste, add a bit of lukewarm water to make it thinner.
  4. Add salt and serve it right away.

Ingredients:

  • 1/2 cup cilantro leaves
  • 15 ounces of fire-roasted tomatoes, chopped
  • 2 cloves of garlic
  • 1 jalapeno, seeds removed and chopped
  • ½ chopped red onion
  • 2 tbsp lime juice
  • Salt

Method:

Watermelon and Mint “Agua Fresca”

Yields: 8 servings   Total Time: 10 minutes   Preparation Time: 10 minutes

Ingredients:

  • 4 cups of seeded and cubed watermelon
  • 1/2 cup of water
  • About 24 mint leaves
  • 8 tbsp of granulated sugar
  • 4 thin lime slices, cut in halves
  • Ice

Method:

  1. Transfer watermelon and water to the blender jar and blend until you get a smooth mixture.
  2. Among 8 glasses, evenly distribute mint leaves, lime slices and sugar.
  3. Place 3 ice cubes in each glass and transfer the contents of the blender to it.
  4. Use a spoon to stir the contents of each glass before serving.

Mango Blender Salsa

Ingredients:

  • 2 small mangoes
  • 1/2 cup cilantro leaves
  • 1 jalapeno
  • 2 tbsp lime juice
  • 1 bell pepper
  • 1/3 cup of chopped scallions
  • Salt

Method:

  1. Peel the mangoes, remove the pit and cut them into cubes. Remove seeds from jalapeno and cut it into cubes.
  2. To the blender jar, transfer cilantro, lime juice, jalapeno, salt and 1/3 of the mango.
  3. Pulse it a couple of times until the contents have mixed but not blended completely. You want them to be chunky.
  4. Transfer the contents to a bowl and add rest of the ingredients including mango, scallions and bell pepper.

Salmon Blender Soufflé

Total Time: 1 hr 5 min   Preparation Time: 20 minutes   Cooking Time: 45 minutes

Yields: 4 servings

Ingredients:

  • Butter as required
  • Bread crumbs as required
  • 8 ounces of smoked salmon
  • 6 eggs
  • 12 ounces of cottage cheese
  • 2 tbsp of lemon juice
  • 1 tsp of Dijon mustard
  • ½ cup red onion, chopped
  • 1/4-cup of dill

Method:

  1. Preheat oven at 350ᵒ
  2. Take 1 quart soufflé dish and brush it with butter. Sprinkle breadcrumbs until it is completely coated.
  3. Cut the smoked salmon into pieces and remove skin and bones from it. Shred the meat with your hands or using a fork.
  4. Transfer the rest of the ingredients to the blender jar. Blend for 40 seconds.
  5. Transfer the blended contents to the shredded salmon and mix them. Pour the contents into the soufflé dish.
  6. Bake for about 50 minutes or until the surface has browned slightly.
  7. Let it stay in the oven for another half an hour before serving.

Blended Cherry Mojitos

Yields: 4 servings   Total Time: 2 minutes   Preparation Time: 2 minutes

Ingredients:

  • 1 pound of frozen cherries, seeds removed
  • 2 cups of ice, crushed (and additional for serving)
  • 1/2 cup of mint leaves
  • 1/3 cup of lime juice
  • 1 cup of rum with citrus flavor
  • 1 2/3 cups Lime Simple Syrup, the recipe is given below
  • Cherries and lime wedges for garnishing

Ingredients for Lime Simple Syrup

  • 2 cups of sugar
  • 1 cup of water
  • Zest from 3 limes

Method:

  1. Refrigerate 5 serving glasses before starting the rest of the preparation.
  2. Transfer ice, frozen cherries, lime juice, mint leaves, simple syrup and rum to the blender jar and blend until you get a smooth mixture.
  3. Transfer the blended mixture evenly into the 5 glasses that you refrigerated in step 1.
  4. Top the glasses with crushed ice. Add cherries and lime wedges to garnish before serving.

Method for Lime Simple Syrup

  1. Turn on the flame to medium heat and place a saucepan over it.
  2. Transfer sugar, lime zest and water into the saucepan and let the mixture come to boil.
  3. Lower the stove and allow the contents to cook on low heat, stirring at occasions, for about 5 minutes or till the sugar dissolves completely.
  4. Turn off the flame and allow the contents to rest for about 20 minutes.
  5. When the syrup has cooled down, strain it and then use it for the main recipe.
