3 Soup Recipes You Can Instantly Make In Your Blender

Everybody knows blenders can make excellent smoothies. But did you know that they also make great soups in merely minutes which you can enjoy on a cold evening after a long working day? There are hundreds of soup recipes you can try if there is a blender in your kitchen and almost all of them are very simple. All of them require the same steps more or less. You have to cook the vegetables in some broth along with stuff like onions or garlic, add some spices for taste. Once everything is cooked, you will just need to blend them. If you have a high performance blender, you are in luck because it will take less than half the effort and time for making soup in it. The great thing about these blenders is they can cook! You simply need to add the ingredients to the blender, select the ‘soup’ setting and it’s done! Here are some flavorful soups you can try in your blender:

Carrot Soup:

Carrot SoupThis is one of the simplest and the most popular vegetable soup.

Ingredients:

2 tbsp coconut oil
1 chopped onion
1 tbsp red curry paste
2 pounds peeled and chopped carrots
1 ¼ ounce coconut milk
Salt to taste
1 ½ cup water
1 lemon

Method:

Saute onion in oil and then add carrots and red curry paste. Let it cook for 2 minutes before adding in water, coconut milk and salt. It will take about 15 minutes for the carrots to tenderize after which you can immerse a hand blender in the pot to puree the soup. You can also blend in a regular blender after the mixture has cooled down. After it has been pureed into a smooth soup, add more water if it’s too thick. Adjust the seasonings after tasting the soup. Squeeze a lemon in the soup and serve it in bowls.

Cauliflower Soup

Cauliflower SoupSuch a creamy soup! Who would have guessed the chief ingredient is cauliflower!

Ingredients:

5 tbsp butter
1 chopped onion
3 sliced garlic cloves
1 ¾ pound cauliflower head, cut in pieces
1 ½ tsp coriander powder
Salt and pepper
4 cups vegetable broth
1 egg
1 ½ tsp cornstarch
1 cup yogurt

Method:

Heat butter in a saucepan with onion and garlic and let it cook for 5 minutes. Add in the pan, cauliflower, coriander, salt and pepper let it cook while stirring for a further 5 minutes. Add the broth and let it boil for a good 15 minutes until the cauliflower turns soft. Puree it using a blender. In a separate bowl whisk together egg and cornstarch and then add yogurt. Whisk everything and add it to the soup. Bring the mixture to boil while constantly stirring until it thickens. Check and adjust the seasonings and garnish with chopped cilantro.

Tomato Soup:

Tomato SoupThis is the vegetable soup almost everybody loves!

Ingredients:

2 tbsp olive oil
1 diced onion
2 minced garlic cloves
Salt and pepper
Red pepper flakes
28 ounce peeled tomatoes
1 ½ cup chicken stock
1/3 cup cream

Method:

Cook onions in oil for about 15 minutes but don’t let them turn brown. Include garlic and red pepper flakes cooking the mixture for a further 5 minutes. Add in the tomatoes and let them cook for 10 minutes until they are soft. Add the stock and cook further for about 15 more minutes. Puree the soup using your blender until it is completely smooth. Reheat it and add cream. You should also check and adjust the seasonings at this point. Serve in bowls garnished with grated Parmesan cheese.
